아황산 수소 나트륨은 흰색 결정성 고체 또는 분말로, 일반적으로 무취이거나 약한 이산화황 냄새가 나며 물에 매우 잘 녹는다. 가열하거나 산을 첨가하면 융해되기 전에 분해되어 SO₂를 방출한다. 이는 무기 염이며 환원제로서, 일반적으로 NaHSO₃ 형태로 제조되며(대개 수화물 또는 수용액 형태임) 주로 방부제, 항산화제 및 술포닐화제로 산업 공정에 사용된다. 또한 유기 술폰산염, 염료, 의약품 합성의 핵심 중간체로 광범위하게 활용된다. 주요 적용 분야로는 식품 보존(가공 보조제로서), 수질 정화(염소 제거용), 제지 및 펄프 표백, 염료 제조, 가죽 태닝 제제, 그리고 특정 농약 제형 등이 있다.

It can be used for candied fruit, glucose, sugar, rock candy, caramel, candy, liquid glucose, dried fruit, dried vegetables, vermicelli, bamboo shoots, mushrooms and mushroom cans in provisions of our country, with a maximum use of 0.45g/kg; it can also be used for potato starch with a maximum use amount of 0.2g/kg and a maximume residual amount (in terms of SO2) of less than 0.03 g/kg.4. Used as reductants in analysis and also as bleach and bacterial inhibitors5. Used as reducing agent, antiseptic, disinfectant and bleach.
