올레산은 상온에서 무색에서 옅은 노란색의 점성 액체로, 약간의 특유한 냄새를 지니며, 융점은 13–14 °C이고 대기압에서의 끓는점은 약 360 °C이다. 올레산은 단일불포화 오메가-9 지방산(시스-9-옥타데세노익산)으로, 자연 유기 화학물질로 분류되며, 일반적으로 식물성 기름 및 동물성 지방에서 유래한다. 산업적으로 올레산은 계면활성제, 윤활제, 유화제 및 금속 비누 합성에 있어 핵심 중간체로 사용된다. 주요 응용 분야는 개인용품(예: 비누 및 화장품), 코팅제, 가소제, 농약 제형—특히 살충제 보조제 및 유화 가능 농축액의 성분—등을 포함한다.
