Олеиновая кислота (CAS 112-80-1) — это бесцветная или слабо желтоватая маслянистая жидкость с характерным слабым жирным запахом, не имеющая резкого запаха при чистоте, с температурой плавления около 13–14 °C и температурой кипения 360 °C при давлении 760 мм рт. ст. Химически она относится к ненасыщенным жирным монокарбоновым кислотам класса омега-9, являясь цис-изомером октадеценовой кислоты с двойной связью между 9-м и 10-м атомами углерода. Как один из наиболее распространённых компонентов растительных и животных жиров, олеиновая кислота широко используется в качестве ключевого промежуточного соединения в синтезе мыл, эмульгаторов, смазочных материалов, аминокислотных производных и поверхностно-активных веществ. Её основные применение охватывают секторы моющих средств, косметики и личной гигиены, пищевой промышленности (в качестве эмульгатора и стабилизатора), а также производства полимерных добавок и биоразлагаемых пластиков.
