Potassium sorbate is a white to off-white crystalline powder, odorless and non-volatile, with a melting point of approximately 270 °C (with decomposition). It is the potassium salt of sorbic acid, classified as an organic chemical and food-grade preservative. Its primary industrial use is as a microbiostatic agent to inhibit yeasts, molds, and bacteria in food, beverages, wines, and pharmaceutical formulations. It is also employed in cosmetics, personal care products, and certain industrial adhesives and coatings where microbial stability is required. Potassium sorbate is not used as a chemical intermediate in synthesis; its applications are predominantly functional, relying on its established efficacy and regulatory acceptance as a direct preservative.
