Sorbic acid is a white to off-white crystalline solid with a faint, characteristic odor; it has a melting point of approximately 134–137 °C and low volatility under ambient conditions. It is an unsaturated aliphatic carboxylic acid, classified as a natural organic chemical and food-grade preservative. Industrially, sorbic acid is primarily used as a direct antimicrobial agent in food, beverages, wine, and personal care products, and serves as a key intermediate in the synthesis of sorbate salts (e.g., potassium sorbate) and ester derivatives. Its applications are concentrated in food preservation, pharmaceutical formulations, and cosmetic stabilization—where inhibition of yeasts, molds, and bacteria is required.
