Sorbitol is a white, crystalline, odorless solid at room temperature, moderately hygroscopic and highly soluble in water; it has a melting point of approximately 94–97 °C and decomposes before boiling. It is classified as a sugar alcohol (polyol), derived from the catalytic hydrogenation of glucose. Industrially, sorbitol serves as a key intermediate in the production of vitamin C (ascorbic acid) via the Reichstein process and is widely used in the synthesis of isosorbide, a monomer for bio-based polymers and plasticizers. Its primary application areas include food (as a humectant, sweetener, and bulking agent), pharmaceuticals (as an excipient in tablets and syrups), and personal care products (in toothpaste and cosmetics). It is also employed in the manufacture of surfactants, resins, and as a raw material for specialty chemicals in polymer and coating formulations.
