Sodium erythorbate is a white to off-white, crystalline, odorless powder that is highly soluble in water and stable under typical storage conditions. It is the sodium salt of erythorbic acid (D-isoascorbic acid), classified as an organic chemical and a stereoisomer of ascorbic acid. Primarily used as a food-grade antioxidant and color stabilizer, it functions by inhibiting enzymatic browning and preventing nitrosamine formation in cured meats. Its main industrial applications are in food processing—especially in meat, poultry, and seafood products—as well as in beverages and fruit-based preparations. It is not used as a chemical intermediate in synthesis of agrochemicals, pharmaceuticals, or polymers.
