Malt Extract

Malt extract is a viscous, hygroscopic, dark brown to black semi-solid or thick syrup at room temperature, with a characteristic malty, slightly sweet odor and no significant volatility. It is a complex mixture of carbohydrates (primarily maltose, dextrins, and glucose), proteins, peptides, amino acids, and minor organic compounds derived from the enzymatic hydrolysis of barley starch. As a natural, biologically derived organic material—not a single chemical entity—it is classified as a biochemical mixture rather than a defined organic chemical or synthetic intermediate. Its primary industrial uses are in food and beverage manufacturing (e.g., brewing adjuncts, flavor enhancers, nutritional supplements) and as a fermentation substrate in biotechnology and pharmaceutical production. Typical application areas include functional foods, yeast propagation media, microbial culture media, and natural flavor systems.

Malt extract is used in face masks and toning lotions as a nutrient and texturizer. This dark syrup is obtained by evaporating an aqueous extract of partially germinated and dried barley seeds.
