Fumaric acid is a white, crystalline solid with a faint, tart odor and low volatility; it decomposes before boiling and has a melting point of approximately 287 °C. It is an unsaturated dicarboxylic organic acid and a key biochemical intermediate in the tricarboxylic acid (TCA) cycle. Industrially, it serves primarily as a chemical intermediate in the synthesis of resins—especially alkyd and unsaturated polyester resins—and as a precursor to fumarate salts and esters. Its principal application areas include polymers and coatings, food and beverage (as an acidulant), and pharmaceuticals (e.g., in iron supplementation formulations).

Fumaric acid is naturally occurring in plants, such as lichen and Iceland moss, and in animals. For example, the skin produces fumaric acid when exposed to light.
